  • 1/4 cup fresh lemon juice (from about 1-2 lemons)
  • 1/4 cup chopped fresh parsley
  • 1 pound large shrimp, peeled and deveined
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) to the skillet. Cook until fragrant, about 1 minute, stirring constantly. Be careful not to burn the garlic.
  4. Pour in the white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes, allowing the alcohol to evaporate slightly.
  5. Stir in the fresh parsley.
  6. Add the shrimp to the skillet. Cook for 2-3 minutes per side, until the shrimp are pink and cooked through.
  7. Add the drained pasta to the skillet with the shrimp and sauce. Toss to combine.
  8. If the sauce seems too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  9. Season with salt and freshly ground black pepper to taste.
  10. Serve immediately.
