Description

Prepare tender, flavorful lamb chops pan-seared with garlic and rosemary, finished with a bright lemon butter sauce.

Ingredients

Scale
  • 4 thick cut lamb loin chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary, leaves chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Pat the lamb chops dry with paper towels. Season both sides evenly with salt and pepper.
  2. Heat the olive oil in a large, heavy skillet over medium-high heat until shimmering.
  3. Add the lamb chops to the hot skillet, ensuring not to overcrowd the pan. Sear for 3 to 4 minutes per side until a deep brown crust forms.
  4. Reduce the heat to medium. Add the minced garlic and chopped rosemary to the pan around the chops. Cook for 1 minute until fragrant, turning the chops to coat them in the aromatics.
  5. For medium-rare doneness (internal temperature of 130-135°F), continue cooking, turning occasionally, for another 2 to 4 minutes depending on thickness.
  6. Remove the lamb chops from the skillet and place them on a plate. Tent loosely with foil and let them rest for 5 minutes.
  7. Return the skillet to low heat. Add the butter, lemon juice, and lemon zest to the remaining pan drippings. Whisk constantly until the butter melts and forms a smooth sauce. Do not let the sauce boil.
  8. Spoon the lemon butter sauce generously over the rested lamb chops before serving.

Notes

  • Use a meat thermometer to check the internal temperature for accurate doneness. For medium, aim for 135-140°F.
  • If you prefer grilling, cook over medium-high heat for 4-5 minutes per side for medium-rare.
  • Serve these chops with roasted asparagus or creamy mashed potatoes.
