Description
A very moist chocolate cake recipe featuring holes poked through and filled with a sweet milk mixture, topped with classic coconut pecan frosting.
Ingredients
Scale
- 1 box (15.25 oz) chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup caramel sauce (or dulce de leche)
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
- 1 cup shredded coconut
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup milk
- 2 large egg yolks
- 1 teaspoon vanilla extract
Instructions
- Prepare the cake batter according to the package directions using the cake mix, water, oil, and eggs. Pour the batter into a greased and floured 9×13 inch baking pan.
- Bake the cake at 350 degrees F for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is still warm, use the handle of a wooden spoon or a large fork to poke holes all over the top of the cake, about 1 inch apart.
- In a small bowl, whisk together the sweetened condensed milk and caramel sauce. Pour this mixture evenly over the top of the warm cake, allowing it to soak into the holes. Sprinkle the chocolate chips over the top. Let the cake cool completely.
- Prepare the frosting: In a medium saucepan, combine the butter, brown sugar, milk, and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 8 to 10 minutes). Do not boil.
- Remove the frosting from the heat and stir in the vanilla extract, pecans, and coconut.
- Spread the warm coconut pecan frosting evenly over the cooled cake. Chill the cake for at least 2 hours before serving to allow the soak to fully penetrate.
Notes
- For an extra gooey topping, you can gently warm the frosting slightly before spreading it over the cooled cake.
- You can substitute evaporated milk for the sweetened condensed milk if you prefer a less sweet soak, though the texture will change.
- This cake tastes best when made a day ahead, allowing the flavors to meld.
