Description

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 red bell pepper, sliced
  • Optional: Green onions and sesame seeds for garnish


Instructions

  1. Mix the soy sauce, honey or maple syrup, rice vinegar, and sesame oil in a small bowl to create the sauce. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the ground turkey to the skillet. Break it apart with a spoon and cook until browned completely. Drain any excess fat.
  4. Add the minced garlic and grated ginger to the turkey. Cook for one minute until fragrant.
  5. Add the broccoli, carrots, and red bell pepper to the skillet. Stir fry for 3 to 5 minutes until vegetables are tender-crisp.
  6. Pour the prepared sauce over the turkey and vegetables. Toss everything to coat well. Cook for one minute until the sauce thickens slightly.
  7. Remove from heat. Garnish with green onions and sesame seeds if you wish. Serve immediately over rice or noodles.

Notes

  • Feel free to swap vegetables based on what you have. Zucchini or snap peas work well here.
  • For extra heat, add a pinch of red pepper flakes with the ginger and garlic.
  • This recipe tastes great served over brown rice or cauliflower rice for a lighter meal.
