Description

Make these warm, spiced Gingerbread Energy Balls for a fast and healthy holiday snack. They taste just like gingerbread cookies but keep you energized. Alara Kohn from 911Recipes shares this easy treat.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter (or preferred nut butter)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons ground flaxseed
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Place all ingredients into a food processor.
  2. Process until the mixture comes together and forms a sticky dough. Scrape down the sides as needed.
  3. If the mix seems too dry, add a teaspoon of water or more nut butter. If too wet, add a tablespoon of extra oats.
  4. Roll the mixture into small, bite-sized balls, about 1 inch in diameter.
  5. Place the balls on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • For a stronger gingerbread flavor, add a tiny pinch of black pepper.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can roll the finished balls in shredded unsweetened coconut or extra cinnamon sugar if you like a coating.
