Instructions

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and molasses until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Heat a lightly buttered griddle or large skillet over medium heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook for 2-3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
  7. Serve immediately with your favorite toppings.

Notes

  • For a richer molasses flavor, use blackstrap molasses.
  • If you prefer a less intense spice level, reduce the cloves and nutmeg by half.
  • You can prepare the dry ingredients ahead of time and store them in an airtight container.
