- 2 lbs carrots, peeled and trimmed
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 3 tablespoons honey
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the prepared carrots on a large baking sheet.
- In a small bowl, whisk together the melted butter, minced garlic, honey, olive oil, salt, and pepper to create the glaze.
- Pour the glaze mixture over the carrots and toss them well until they are evenly coated.
- Spread the carrots in a single layer on the baking sheet.
- Roast for 25 to 30 minutes, tossing them halfway through the cooking time, until the carrots are tender and slightly caramelized.
- Remove from the oven and serve immediately.
Notes
- For easier cleanup, line your baking sheet with parchment paper before tossing the carrots in the glaze.
- If your carrots are very thick, cut them in half lengthwise so they cook evenly with the thinner pieces.
- You can add a pinch of red pepper flakes to the glaze for a little heat.
