- 4 ears fresh corn, husked
- 1/4 cup mayonnaise (ensure gluten-free brand)
- 1/4 cup sour cream or Mexican crema (ensure gluten-free brand)
- 2 tablespoons fresh lime juice
- 1/2 teaspoon chili powder, plus more for sprinkling
- 1/4 teaspoon ground cumin
- 1/4 cup crumbled Cotija cheese (ensure gluten-free)
- 2 tablespoons chopped fresh cilantro
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn directly on the grates for 10-15 minutes, turning occasionally, until kernels are tender and slightly charred. Alternatively, boil or roast the corn.
- While the corn cooks, mix mayonnaise, sour cream or crema, lime juice, chili powder, and cumin in a small bowl.
- Once corn is cooked, spread the mayonnaise mixture evenly over each ear of corn.
- Sprinkle generously with crumbled Cotija cheese and chopped cilantro.
- Serve immediately with extra chili powder for sprinkling and lime wedges on the side.
Notes
- Use fresh, sweet corn for the best flavor.
- If Cotija cheese is unavailable, use Parmesan cheese as a substitute.
- Adjust chili powder to your spice preference.
