Ingredients
Scale
- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1/4 cup finely chopped cilantro
- 1/4 cup crumbled cotija cheese (ensure gluten-free)
- 1/4 teaspoon chili powder, plus more for dusting
- Salt to taste
Instructions
- Preheat your grill or broiler.
- Brush the corn with olive oil and grill or broil until tender and lightly charred, turning occasionally.
- In a small bowl, mix together the mayonnaise, lime juice, and chopped cilantro.
- Once the corn is cool enough to handle, spread a generous layer of the mayonnaise mixture over each ear.
- Sprinkle the cotija cheese and chili powder over the mayonnaise.
- Season with salt to taste. Serve immediately.
Notes
- Always check the label of your cotija cheese to ensure it is gluten-free, as some brands may contain gluten-containing anti-caking agents.
- If you don’t have cotija cheese, you can substitute with a firm, salty cheese like feta, ensuring it’s gluten-free.
- For extra flavor, you can add a pinch of cayenne pepper to the chili powder mixture.
