Make a flavorful chicken burger featuring a spicy and savory Gochujang glaze and marinade.

- 1.5 lbs ground chicken
- 1/4 cup Gochujang (Korean chili paste)
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 4 burger buns
- 4 slices provolone or Monterey Jack cheese (optional)
- 1/4 cup mayonnaise
- 1 tablespoon sriracha (optional, for extra heat)
- 1/2 cup shredded cabbage or coleslaw mix
- 2 tablespoons thinly sliced green onions for garnish
Instructions
- In a bowl, mix the Gochujang, soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and black pepper. This is your marinade/glaze base.
- Reserve half of the mixture for glazing later.
- Place the ground chicken in a separate bowl. Add the remaining half of the Gochujang mixture to the chicken and mix gently until just combined. Do not overmix.
- Form the chicken mixture into four equal patties, slightly wider than your buns.
- Heat a skillet or grill to medium-high heat. Lightly oil the cooking surface.
- Cook the chicken patties for 5-7 minutes per side, until cooked through (internal temperature reaches 165°F or 74°C).
- During the last 2 minutes of cooking, brush the reserved Gochujang glaze generously over both sides of the patties.
- If using cheese, place a slice on each patty during the last minute of cooking and cover briefly to melt.
- While the chicken cooks, mix the mayonnaise and sriracha (if using) to create a spicy mayo.
- Lightly toast the burger buns.
- To assemble, spread the spicy mayo on both halves of the bun.
- Place a layer of shredded cabbage on the bottom bun.
- Top with the glazed Gochujang chicken patty.
- Garnish with sliced green onions and place the top bun on.
Notes
- If you cannot find Gochujang, you can substitute with a mix of miso paste, chili garlic sauce, and a touch of brown sugar, though the flavor profile will change.
- For a crispier texture, you can pan-fry the patties in a little neutral oil instead of grilling.
- Use brioche or potato buns as they hold up well against the moist glaze.
