  • 1/4 teaspoon black pepper
  • 1/4 cup lemon juice
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1 (10 ounce) package of chopped romaine lettuce
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Tzatziki sauce for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss chicken thighs with olive oil, oregano, thyme, garlic powder, onion powder, salt, and pepper.
  3. Arrange chicken in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. While chicken bakes, prepare the marinade: whisk together Greek yogurt, lemon juice, dill, and parsley in a small bowl.
  6. Once chicken is cooked, let it cool slightly, then chop into bite-sized pieces.
  7. In a large bowl, combine chopped romaine lettuce, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  8. Add the chopped chicken to the bowl.
  9. Drizzle with tzatziki sauce and sprinkle with feta cheese.
  10. Toss gently to combine.
