Description

A vibrant and refreshing Greek salad featuring crisp vegetables, briny olives, and creamy feta cheese, all tossed in a simple, homemade lemon-herb vinaigrette. Perfect for a light lunch or a side dish.

Ingredients

Scale
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large cucumber, chopped
  • 2 large tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 6 ounces feta cheese, crumbled

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper. Set aside.
  2. In a large salad bowl, combine the chopped cucumber, tomatoes, sliced red onion, and Kalamata olives.
  3. Pour the dressing over the salad ingredients and toss gently to coat.
  4. Sprinkle the crumbled feta cheese over the top.
  5. Serve immediately.

Notes

  • For an extra burst of flavor, add a pinch of dried dill to the dressing.
  • You can substitute green olives for Kalamata olives if preferred.
  • For a heartier salad, add grilled chicken or chickpeas.
