Instructions

- Blanch the green beans in boiling salted water for 5-7 minutes until crisp-tender. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until browned and their liquid has evaporated, about 8-10 minutes.
- Add the chopped onion to the skillet with the mushrooms and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Sprinkle the flour over the mushroom and onion mixture. Stir well and cook for 1-2 minutes to toast the flour.
- Gradually whisk in the milk and heavy cream until smooth. Bring the mixture to a simmer, stirring constantly, until it thickens into a sauce.
- Season the sauce with salt, pepper, and nutmeg. Taste and adjust seasonings as needed.
- Gently fold the blanched green beans into the creamy mushroom sauce.
- Pour the mixture into a 9×13 inch baking dish.
- Top evenly with the fried onions.
- Bake for 20-25 minutes, or until bubbly and the topping is golden brown.
- Let stand for a few minutes before serving.
