Make fun, themed breakfast sliders using spinach to naturally color the eggs, served on small rolls with ham.

- 12 small slider rolls (like Hawaiian rolls)
- 1 pound thinly sliced deli ham
- 10 large eggs
- 1 cup fresh spinach, packed
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1/2 cup shredded Swiss cheese
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Prepare the green egg mixture: Place the spinach, eggs, milk, salt, and pepper into a blender. Blend until the mixture is completely smooth and bright green.
- Melt the butter in a large skillet over medium heat. Pour the green egg mixture into the skillet. Cook, stirring gently, until the eggs are mostly set but still slightly wet, like soft scrambled eggs. Stir in the Swiss cheese until melted.
- Slice the slider rolls in half horizontally, keeping the rolls connected if possible. Place the bottom halves of the rolls in the prepared baking dish.
- Layer the ham evenly over the bottom layer of rolls.
- Spoon the green egg mixture over the ham layer, spreading it out to cover the rolls.
- Place the top halves of the rolls over the egg layer.
- Bake for 15 to 20 minutes, or until the rolls are lightly golden and the filling is heated through.
- Remove from the oven and slice the sliders apart before serving immediately.
Notes
- For a make-ahead option, assemble the sliders completely (do not bake) and cover tightly. Refrigerate for up to 24 hours. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
- You can use any small, soft roll, such as brioche or potato rolls, if you do not have Hawaiian rolls.
- If you prefer a firmer egg texture, you can bake the green egg mixture in the baking dish first until set, then slice it to fit the rolls before assembly and the final bake.
