Ingredients

- 4 ears of corn, husked
- 2 avocados, diced
- 1/2 red onion, finely diced
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and finely minced (optional)
- Juice of 1 lime
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Brush corn with olive oil and season with salt and pepper.
- Grill corn for 10-12 minutes, turning occasionally, until charred and tender.
- Let corn cool slightly, then cut the kernels off the cobs into a large bowl.
- Add the diced avocados, red onion, cilantro, and jalapeño (if using) to the bowl with the corn.
- Squeeze the lime juice over the mixture.
