Ingredients

  • 4 ears of corn, husked
  • 2 avocados, diced
  • 1/2 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and finely minced (optional)
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and black pepper to taste


Instructions

  1. Preheat grill to medium-high heat.
  2. Brush corn with olive oil and season with salt and pepper.
  3. Grill corn for 10-12 minutes, turning occasionally, until charred and tender.
  4. Let corn cool slightly, then cut the kernels off the cobs into a large bowl.
  5. Add the diced avocados, red onion, cilantro, and jalapeño (if using) to the bowl with the corn.
  6. Squeeze the lime juice over the mixture.
  7. Gently toss to combine.
  8. Season with salt and pepper to taste.
