Description

Sweet corn grilled and brushed with a tangy chili lime butter.


Ingredients

  • 4 ears of corn on the cob, husked
  • 1/2 cup unsalted butter, softened
  • 1 lime, zested and juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste


Instructions

  1. Preheat your grill to medium heat.
  2. In a small bowl, combine the softened butter, lime zest, lime juice, chili powder, smoked paprika, and cayenne pepper (if using). Season with salt and pepper. Mix until well combined.
  3. Brush each ear of corn generously with the chili lime butter.
  4. Place the corn on the preheated grill.
  5. Grill the corn for 15-20 minutes, turning occasionally, until the kernels are tender and slightly charred.
  6. Remove from the grill and serve immediately, with extra chili lime butter if desired.

Notes

  • Soaking the corn in water for 15-30 minutes before grilling can help keep it moist.
