Description

Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Wash and trim the ends of the zucchini and yellow squash.
  2. Use a vegetable peeler to carefully shave the zucchini and yellow squash into thin ribbons. Stop when you reach the seeds in the center.
  3. Place the ribbons in a medium bowl.
  4. Drizzle with olive oil, salt, and pepper. Gently toss to coat.
  5. Preheat your grill to medium heat.
  6. Carefully place the ribbons on the preheated grill. You may find it easier to grill them in batches.
  7. Grill for 1-2 minutes per side, or until slightly tender and grill marks appear.
  8. Remove from the grill and serve immediately.

Notes

  • For best results, use firm, fresh zucchini and squash.
  • Be careful not to overcook the ribbons; they should still have a slight bite.
