Easy grilled zucchini and yellow squash ribbons with a simple seasoning.
Ingredients

- 2 medium zucchini
- 2 medium yellow squash
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and trim the ends of the zucchini and yellow squash.
- Use a vegetable peeler to carefully shave the zucchini and yellow squash into thin ribbons. Stop when you reach the seeds in the center.
- Place the ribbons in a medium bowl.
- Drizzle with olive oil, salt, and pepper. Gently toss to coat.
- Preheat your grill to medium heat.
- Carefully place the ribbons on the preheated grill. You may find it easier to grill them in batches.
- Grill for 1-2 minutes per side, or until slightly tender and grill marks appear.
- Remove from the grill and serve immediately.
Notes
- For best results, use firm, fresh zucchini and squash.
- Be careful not to overcook the ribbons; they should still have a slight bite.
- You can add other seasonings like garlic powder, dried herbs, or a pinch of red pepper flakes.
