Description
Create amazing Harissa Roasted Cauliflower Steaks, a simple, flavorful vegan side dish perfect for any busy day. This recipe brings warmth and spice to your table, just like family cooking should.
Ingredients
Scale
- 1 large head of cauliflower
- 2 tablespoons olive oil
- 2 tablespoons harissa paste
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional Garnish: Fresh cilantro or parsley
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Carefully slice the cauliflower head vertically into four thick ‘steaks,’ keeping the core intact so the slices hold together. If the outer pieces crumble, save them for roasting separately.
- In a small bowl, whisk together the olive oil, harissa paste, smoked paprika, salt, and pepper to make the marinade.
- Place the cauliflower steaks on the prepared baking sheet. Brush both sides of each steak generously with the harissa mixture.
- Roast for 20 to 25 minutes, flipping halfway through, until the edges are tender and slightly caramelized.
- Remove from the oven. Garnish with fresh herbs if you wish. Serve immediately as a hearty side dish.
Notes
- If your cauliflower is very large, you may need to cut it into three thick steaks instead of four.
- Adjust the amount of harissa paste if you prefer less heat.
- You can use any leftover small cauliflower pieces mixed with the marinade and roast them alongside the steaks.
- This recipe honors the idea that good food doesn’t need complicated steps.
