Description

This Double Chocolate Zucchini Bread is a moist and delicious gluten-free treat. It’s packed with chocolate flavor and hidden zucchini for a healthy twist. Perfect for breakfast, a snack, or dessert.


Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (about 1 medium zucchini, squeezed dry)
  • 1 cup chocolate chips (plus more for topping)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, cocoa powder, baking soda, salt, and baking powder.
  3. In a separate medium bowl, whisk together the granulated sugar, eggs, vegetable oil, applesauce, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the shredded zucchini and chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle extra chocolate chips on top if desired.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
