Description

Make restaurant-style hibachi vegetables at home using a simple, savory soy sauce glaze. This recipe features mixed vegetables cooked quickly over high heat.

Ingredients

Scale
  • 1 tbsp vegetable oil
  • 1 medium yellow onion, cut into wedges
  • 1 medium zucchini, sliced
  • 1 cup sliced mushrooms (cremini or white button)
  • 1 medium carrot, thinly sliced on a bias
  • 1/2 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp mirin (sweet rice wine)
  • 1 tbsp water
  • 1 tsp brown sugar
  • 1/2 tsp toasted sesame oil

Instructions

  1. Prepare the glaze: In a small bowl, whisk together the soy sauce, mirin, water, brown sugar, and sesame oil. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the onions and carrots to the hot pan. Cook for 2 minutes, stirring frequently.
  4. Add the zucchini and mushrooms. Continue to cook for 3 minutes, stirring constantly to prevent burning.
  5. Add the broccoli florets and cook for 1 minute more.
  6. Push the vegetables to one side of the pan. Add the minced garlic and grated ginger to the cleared space and cook for 30 seconds until fragrant.
  7. Toss the garlic and ginger with the vegetables.
  8. Pour the prepared soy sauce glaze over the vegetables. Cook for 1 to 2 minutes, stirring constantly, until the sauce thickens slightly and coats the vegetables evenly.
  9. Remove from heat immediately and serve.

Notes

  • For best results, cook the vegetables in batches if your pan is not large enough to avoid overcrowding, which causes steaming instead of searing.
  • You can substitute the vegetables with others you prefer, such as bell peppers or snow peas.
  • If you do not have mirin, you can substitute it with 1 tablespoon of dry white wine mixed with 1 teaspoon of sugar.
