- 1 cup low-fat cottage cheese
- 2 large eggs
- 1/4 cup oat flour (or regular flour)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- Cooking spray or butter for the pan
Instructions
- Place the cottage cheese, eggs, flour, vanilla extract, baking powder, and salt into a blender.
- Blend until the mixture is completely smooth. Stop and scrape down the sides if necessary.
- Heat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or butter.
- Pour 1/4 cup of batter onto the hot surface for each pancake.
- Cook for 3 to 4 minutes per side, until bubbles appear on the surface and the edges look set. Flip carefully.
- Cook the second side for 2 to 3 minutes until golden brown.
- Serve immediately with your preferred toppings.
Notes
- For a fluffier texture, let the batter rest for 5 minutes before cooking.
- If you do not have a blender, mix the ingredients thoroughly in a bowl, pressing the cottage cheese curds against the side of the bowl until mostly smooth.
- You can substitute almond flour for oat flour for a lower-carb version.
- Add a small amount of cinnamon or a few drops of liquid sweetener if you prefer more flavor.
