Description

Honey Lavender Lemonade is a refreshing and soothing drink perfect for summer gatherings. This recipe combines the bright tang of lemons with the subtle floral notes of lavender and the sweet richness of honey, creating a balanced and flavorful beverage.

Ingredients

Scale
  • 1 cup honey
  • 1 cup fresh lavender blossoms (or 2 tablespoons dried culinary lavender)
  • 4 cups hot water (for lavender infusion)
  • 2 cups fresh lemon juice (about 8-10 lemons)
  • 6-8 cups cold water
  • Lemon slices, for garnish
  • Fresh lavender sprigs, for garnish

Instructions

  1. To make the lavender simple syrup, combine honey and hot water in a saucepan. Add fresh lavender blossoms (or dried culinary lavender).
  2. Bring the mixture to a simmer over medium heat, stirring until the honey dissolves.
  3. Remove from heat and let steep for 30 minutes to an hour, or until the desired lavender flavor is reached. The longer it steeps, the stronger the flavor.
  4. Strain the lavender simple syrup through a fine-mesh sieve into a pitcher, discarding the lavender blossoms.
  5. Add fresh lemon juice and cold water to the pitcher with the lavender simple syrup.
  6. Stir well to combine all ingredients.
  7. Taste and adjust sweetness or tartness as needed, by adding more honey syrup or lemon juice.
  8. Chill the lemonade in the refrigerator for at least 1 hour before serving.
  9. Serve over ice, garnished with lemon slices and fresh lavender sprigs.

Notes

  • For a stronger lavender flavor, gently muddle the lavender blossoms before steeping.
  • You can prepare the lavender simple syrup ahead of time and store it in the refrigerator for up to a week.
  • Adjust the amount of cold water to achieve your preferred strength and sweetness.
  • For a sparkling version, use sparkling water instead of still water.
