Description

Make a delicious and hearty beef chili quickly and easily with your Instant Pot. This recipe is perfect for a comforting weeknight meal.


Ingredients

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (4 ounce) can chopped green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced red onion


Instructions

  1. Set your Instant Pot to the “Sauté” function. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the Instant Pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the crushed tomatoes, kidney beans, black beans, pinto beans, diced tomatoes and green chilies, and chopped green chilies to the Instant Pot.
  5. Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
  6. Secure the lid on the Instant Pot and set the valve to “Sealing”.
  7. Select the “Manual” or “Pressure Cook” setting and cook on high pressure for 10 minutes.
  8. Once the cooking cycle is complete, let the pressure release naturally for 10 minutes, then carefully perform a quick release for any remaining pressure.
  9. Open the lid and stir the chili.
  10. Serve hot with your favorite toppings.

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • If you don’t have a specific type of bean, feel free to substitute with another.
  • This chili freezes well, so you can make a big batch and save some for later.
