Description

This Instant Pot White Chicken Chili recipe is a quick and comforting meal, perfect for busy weeknights. It’s packed with flavor and made easily in your pressure cooker.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 3 cups cooked shredded chicken
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado


Instructions

  1. Set your Instant Pot to Sauté mode. Add olive oil and chopped onion. Cook until softened, about 5 minutes.
  2. Add minced garlic, cumin, chili powder, oregano, and cayenne pepper (if using). Stir and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and scrape the bottom of the pot to loosen any browned bits.
  4. Add the rinsed and drained cannellini beans and the can of diced tomatoes with green chilies.
  5. Stir in the cooked shredded chicken.
  6. Secure the lid on the Instant Pot and set the valve to sealing.
  7. Select the Manual or Pressure Cook setting and cook on High pressure for 5 minutes.
  8. Once the cooking cycle is complete, let the pressure release naturally for 10 minutes, then carefully perform a quick release for any remaining pressure.
  9. Open the lid and stir the chili. Season with salt and black pepper to taste.
  10. Serve hot, with your favorite toppings.

Notes

  • For a thicker chili, you can mash some of the beans against the side of the pot before serving.
  • If you don’t have pre-cooked chicken, you can cook chicken breasts in the Instant Pot first, then shred them.
  • Adjust the cayenne pepper to your spice preference.
