Description

  • 8 oz cooked corned beef, shredded or chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup thinly sliced green onions, for garnish
  • 1/2 cup sour cream or Ranch dressing
  • 2 tablespoons Dijon mustard (optional, for drizzling)


Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Spread the frozen waffle fries in a single layer on a large, rimmed baking sheet.
  3. Bake the waffle fries according to package directions until they are golden brown and crispy, usually about 15 to 20 minutes.
  4. Remove the baking sheet from the oven. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the hot fries.
  5. Return the sheet to the oven and bake for 3 to 5 minutes, or until the cheese is fully melted and bubbly.
  6. Remove from the oven. Immediately scatter the shredded corned beef over the melted cheese.
  7. Drizzle the sour cream or Ranch dressing over the top. If using, drizzle with Dijon mustard.
  8. Garnish with sliced green onions. Serve immediately while hot.

Notes

  • For extra crispiness, place the baking sheet in the oven while it preheats.
  • You can substitute cooked, diced ham for corned beef if preferred.
