- 8 oz cooked corned beef, shredded or chopped
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack cheese

- 1/2 cup sour cream or Ranch dressing
- 2 tablespoons Dijon mustard (optional, for drizzling)
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Spread the frozen waffle fries in a single layer on a large, rimmed baking sheet.
- Bake the waffle fries according to package directions until they are golden brown and crispy, usually about 15 to 20 minutes.
- Remove the baking sheet from the oven. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the hot fries.
- Return the sheet to the oven and bake for 3 to 5 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven. Immediately scatter the shredded corned beef over the melted cheese.
- Drizzle the sour cream or Ranch dressing over the top. If using, drizzle with Dijon mustard.
- Garnish with sliced green onions. Serve immediately while hot.
Notes
- For extra crispiness, place the baking sheet in the oven while it preheats.
- You can substitute cooked, diced ham for corned beef if preferred.
- For a spicier kick, mix a dash of hot sauce into the sour cream before drizzling.
