A simple and flavorful pasta salad with Italian antipasto favorites like salami and mozzarella.


Ingredients

  • 1 pound rotini pasta
  • 8 ounces hard salami, diced
  • 8 ounces fresh mozzarella, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook the rotini pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, salami, mozzarella, cherry tomatoes, black olives, red onion, and parsley.
  3. Pour the Italian dressing over the ingredients and toss gently to coat everything evenly.
  4. Season with salt and black pepper to taste.
  5. Chill for at least 30 minutes before serving to allow the flavors to meld.
