Ingredients

  • 1 cup milk

  • ½ cup pumpkin puree (for color and flavor)
  • Orange food coloring (optional, for brighter color)
  • Chocolate chips or candy melts (for jack-o’-lantern faces)
  • Whipped cream or maple syrup (for serving)


Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate medium bowl, whisk together the egg, milk, melted butter or oil, and pumpkin puree. Add a few drops of orange food coloring if you want a more vibrant orange.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour ¼ cup of batter for each pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface.
  7. Remove pancakes from the griddle and let cool slightly.
  8. Once cooled, use chocolate chips or melted candy melts to draw jack-o’-lantern faces on each pancake.
  9. Serve immediately with whipped cream or maple syrup.
