- 4 large bell peppers (any color)
- 1 pound ground turkey or beef
- 1 cup cooked rice
- 1/2 cup chopped onion
- 1/4 cup chopped bell pepper (from another pepper)
- 1/4 cup tomato sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Carve Jack-O’-Lantern faces into the sides of the peppers.
- In a skillet, brown the ground meat with the chopped onion and bell pepper. Drain any excess fat.
- Stir in the cooked rice, tomato sauce, chili powder, cumin, salt, and pepper.
- Spoon the mixture evenly into the carved bell peppers.
- Place the stuffed peppers in a baking dish. Add a little water to the bottom of the dish to help them steam.
- Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through.
- If using cheese, sprinkle it on top during the last 5 minutes of baking.
- Serve hot and enjoy your festive Halloween dinner!

- You can substitute ground turkey with ground beef or a plant-based alternative.
- Add other vegetables like corn or black beans to the filling for extra flavor and texture.
