Description
Make a satisfying, low-carb pizza crust using this simple Fathead dough recipe based on mozzarella cheese and almond flour.

- 1 3/4 cups shredded low-moisture mozzarella cheese
- 2 ounces cream cheese
- 1 large egg
- 3/4 cup almond flour
Instructions
- Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth.
- Stir the melted cheese mixture until it forms a uniform ball.
- Add the egg and almond flour to the cheese mixture. Mix thoroughly until a dough forms. You may need to knead it briefly by hand once it cools slightly.
- Place the dough between two sheets of parchment paper. Roll or press the dough out to a 10 to 12-inch circle or rectangle, about 1/4 inch thick.
- Remove the top sheet of parchment paper. Poke the dough all over with a fork to prevent bubbling.
- Bake the crust for 8 to 12 minutes, or until it is lightly golden brown.
- Remove the crust from the oven, add your desired toppings, and return to the oven to bake for another 5 to 8 minutes, or until toppings are hot and cheese is melted.
Notes
- For a crispier crust, bake the crust for an extra 3 to 5 minutes before adding toppings.
- You can substitute coconut flour for almond flour, but use only 1/2 cup, as coconut flour absorbs more liquid.
- This dough can be made ahead and stored in the refrigerator for up to 3 days.
