Description

Make a satisfying, low-carb pizza crust using this simple Fathead dough recipe based on mozzarella cheese and almond flour.


Ingredients

  • 1 3/4 cups shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese
  • 1 large egg
  • 3/4 cup almond flour


Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth.
  3. Stir the melted cheese mixture until it forms a uniform ball.
  4. Add the egg and almond flour to the cheese mixture. Mix thoroughly until a dough forms. You may need to knead it briefly by hand once it cools slightly.
  5. Place the dough between two sheets of parchment paper. Roll or press the dough out to a 10 to 12-inch circle or rectangle, about 1/4 inch thick.
  6. Remove the top sheet of parchment paper. Poke the dough all over with a fork to prevent bubbling.
  7. Bake the crust for 8 to 12 minutes, or until it is lightly golden brown.
  8. Remove the crust from the oven, add your desired toppings, and return to the oven to bake for another 5 to 8 minutes, or until toppings are hot and cheese is melted.

Notes

  • For a crispier crust, bake the crust for an extra 3 to 5 minutes before adding toppings.
  • You can substitute coconut flour for almond flour, but use only 1/2 cup, as coconut flour absorbs more liquid.
  • This dough can be made ahead and stored in the refrigerator for up to 3 days.
