Ingredients

Scale
  • 1 pound yellow squash, thinly sliced
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 1 large egg, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

  4. In a medium bowl, whisk together the heavy cream and beaten egg.
  5. Stir in the shredded cheddar cheese, grated Parmesan cheese, salt, and pepper.
  6. Add the cooked squash and onion mixture to the cheese mixture and stir to combine.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 20-25 minutes, or until the casserole is set and lightly golden brown on top.
  9. Let it cool slightly before serving.

Notes

  • For an extra flavor boost, you can add a pinch of nutmeg or garlic powder to the cheese mixture.
  • If you prefer a crispier topping, you can add a tablespoon of crushed pork rinds over the casserole before baking.
