- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup key lime juice
- 4 large egg yolks
- 1 teaspoon lime zest
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until well combined.
- Press the crumb mixture evenly into the bottom of the prepared baking pan to form the crust.
- In a separate bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
- Pour the key lime filling evenly over the crust.
- Bake for 20-25 minutes, or until the filling is set and the edges are lightly golden.
- Let the bars cool completely in the pan on a wire rack.
- Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares.
Notes
- For a firmer crust, you can bake it for 8-10 minutes before adding the filling.
