Enjoy a refreshing and bright Kiwi Mojito Mocktail. This non-alcoholic drink is simple to make and perfect for any occasion when you want a taste of summer.

- 2 ripe kiwis, peeled and roughly chopped
- 10 fresh mint leaves, plus extra for garnish
- 1 lime, cut into wedges
- 2 tablespoons simple syrup (or to taste)
- 1 cup sparkling water or club soda, chilled
- Ice cubes
Instructions
- Place the chopped kiwi and mint leaves into a sturdy glass or cocktail shaker.
- Gently muddle the kiwi and mint together until the kiwi is broken down and the mint is fragrant. Do not over-muddle the mint.
- Add the lime wedges and simple syrup to the glass. Muddle lightly just to release the lime juice.
- Fill the glass with ice cubes.
- Top the mixture with chilled sparkling water or club soda.
- Stir gently to combine all the ingredients.
- Garnish with a fresh mint sprig and an extra slice of kiwi, if desired. Serve immediately.
Notes
- For a sweeter drink, increase the simple syrup amount slightly.
- If you do not have simple syrup, dissolve 2 tablespoons of granulated sugar in 2 tablespoons of hot water and let it cool before using.
- You can substitute club soda with lemon-lime soda for a sweeter profile.
