  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tsp minced garlic
  • 1 tsp grated fresh ginger
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil
  • 1/2 cup thinly sliced yellow onion
  • 2 green onions, sliced
  • 1 head butter lettuce or romaine lettuce, leaves separated
  • Optional toppings: sesame seeds, sliced jalapeño, kimchi


Instructions

  1. In a bowl, combine soy sauce, brown sugar, sesame oil, gochujang, minced garlic, grated ginger, and black pepper. Whisk until well combined.
  2. Add the thinly sliced beef to the marinade and toss to coat evenly. Let it marinate for at least 10 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated beef and sliced yellow onion to the hot skillet. Stir-fry for 3-5 minutes, or until the beef is cooked through and slightly caramelized.
  5. Stir in the sliced green onions.
  6. To assemble, spoon the bulgogi mixture into the lettuce leaves.
  7. Top with your favorite optional toppings like sesame seeds, sliced jalapeño, or kimchi.
  8. Serve immediately.

Notes

  • For a spicier kick, add more gochujang or a pinch of red pepper flakes to the marinade.
  • If you don’t have gochujang, you can substitute with sriracha, but the flavor will be slightly different.
  • Thinly sliced beef cooks very quickly, so be careful not to overcook it.
