Description
A refreshing, non-alcoholic beverage featuring the floral taste of lavender sweetened naturally with honey.
Ingredients
Scale
- 1/4 cup water
- 1/4 cup honey
- 1 tablespoon dried culinary lavender buds
- 1 cup sparkling water, chilled
- 1/4 cup fresh lemon juice
- Ice cubes
- Lemon slices, for garnish
- Extra lavender sprigs, for garnish
Instructions
- Make the lavender simple syrup: Combine water, honey, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the honey dissolves completely. Do not boil.
- Remove the syrup from the heat. Let the lavender steep in the syrup for 20 minutes.
- Strain the syrup through a fine-mesh sieve into a clean container, discarding the lavender buds. Let the syrup cool completely.
- To assemble the mocktail, fill a glass with ice cubes.
- Pour 2 tablespoons of the cooled lavender honey syrup into the glass.
- Add 1/4 cup of fresh lemon juice.
- Top the mixture with chilled sparkling water.
- Stir gently to combine.
- Garnish each serving with a lemon slice and a fresh lavender sprig.
Notes
- You can adjust the amount of lavender syrup based on your preferred sweetness level.
- For a stronger lavender flavor, steep the buds for 30 minutes, but taste frequently to avoid bitterness.
- Prepare the lavender honey syrup up to one week ahead and store it covered in the refrigerator.
