Description

A simple recipe to turn leftover meatloaf into a satisfying, upgraded sandwich, featuring a quick pan-fry and suggested toppings.

Ingredients

Scale
  • 4 slices cooked meatloaf (about 1/2 inch thick)
  • 2 tablespoons butter or oil
  • 4 slices sturdy bread (sourdough or rye recommended)
  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 2 slices cheddar or Swiss cheese
  • 1/4 cup thinly sliced onion (optional)
  • 2 tablespoons bread and butter pickles (optional)

Instructions

  1. Slice the leftover meatloaf into 1/2-inch thick pieces if they are not already sliced.
  2. Heat the butter or oil in a skillet over medium heat. Place the meatloaf slices in the hot skillet. Cook for 2 to 3 minutes per side until the meatloaf is heated through and slightly crisped on the edges. Remove from the skillet and set aside.
  3. In a small bowl, mix the mayonnaise, ketchup, and Dijon mustard to create the sandwich sauce.
  4. Lightly butter the outside of the bread slices.
  5. Spread the prepared sauce on the inside of both slices of bread.
  6. Place one slice of bread, sauce-side up, in the skillet (or use a clean pan). Layer with one slice of cheese, the warmed meatloaf slices, onions, and pickles, if using. Top with the second slice of bread, sauce-side down.
  7. Grill the sandwich over medium-low heat for 3 to 4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
  8. Slice in half and serve immediately.

Notes

  • For a patty melt style, use rye bread and Swiss cheese.
  • If you prefer a cold sandwich, skip the pan-frying step and simply assemble the sandwich with cold meatloaf slices.
  • Use leftover meatloaf glaze mixed with a little water as a dipping sauce instead of the prepared sandwich sauce.
