- 8 ounces spaghetti or your preferred pasta
- 2 (5 ounce) cans tuna in olive oil, drained
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup olive oil, plus more for drizzling
- 1/2 cup fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
- While the pasta cooks, prepare the sauce. In a large bowl, combine the drained tuna, minced garlic, fresh lemon juice, 1/4 cup olive oil, chopped parsley, and red pepper flakes (if using).
- Season the tuna mixture with salt and black pepper to taste.
- Add the drained pasta to the bowl with the tuna mixture. Toss well to combine, adding a few tablespoons of the reserved pasta water as needed to create a light sauce and ensure everything is coated.
- Serve immediately, drizzling with a little extra olive oil if desired.
Notes
- For extra flavor, lightly toast the minced garlic in a pan with a tablespoon of olive oil for 1-2 minutes before adding to the tuna mixture.
- If you prefer a creamier sauce, stir in 2 tablespoons of cream cheese or a splash of heavy cream with the pasta water.
