Description

A recipe for a moist pound cake using olive oil for texture and fresh lemon for bright flavor. This cake bakes well in a loaf or bundt pan.


Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 3 large eggs
  • 3/4 cup extra virgin olive oil
  • 1/2 cup whole milk

  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons fresh lemon juice


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9×5 inch loaf pan or a 6-cup bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.
  3. In a large bowl, whisk the granulated sugar and eggs together until pale and slightly thickened, about 2 minutes.
  4. Slowly stream in the olive oil while whisking constantly until fully incorporated.
  5. Whisk in the milk, lemon juice, lemon zest, and vanilla extract until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until the batter is smooth. Do not overmix.
  7. Pour the batter into your prepared pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time may vary based on your pan type.
  9. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
  10. To make the glaze, whisk the powdered sugar and 2 tablespoons of lemon juice until smooth. Drizzle over the cooled cake.

  • Use a good quality, mild-flavored olive oil for the best taste in this cake.
  • For a stronger lemon flavor, you can increase the zest to 3 tablespoons.
  • If you prefer a less sweet finish, omit the glaze and simply dust the cooled cake with powdered sugar.
