Description

Make crispy, flavorful roasted chickpeas seasoned with lemon zest and Parmesan cheese. This recipe yields a satisfying, crunchy snack.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and thoroughly dried
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Dry the rinsed chickpeas completely using paper towels. Remove any loose skins. This step is key for crispiness.
  3. Toss the dried chickpeas with olive oil, salt, and pepper on the baking sheet. Spread them into a single layer.
  4. Roast for 20 minutes.
  5. Remove the baking sheet from the oven. Sprinkle the Parmesan cheese evenly over the chickpeas. Gently toss them on the sheet.
  6. Return the chickpeas to the oven and roast for another 5 to 10 minutes, or until the cheese is lightly golden and the chickpeas are crisp. Watch carefully to prevent burning the cheese.
  7. Remove from the oven and immediately toss with the lemon zest.
  8. Let the chickpeas cool completely on the baking sheet before serving for maximum crunch.

Notes

  • For the crispiest results, ensure the chickpeas are completely dry before adding oil.
  • If you want a vegan option, substitute nutritional yeast for the Parmesan cheese.
  • Store cooled chickpeas in a container with the lid slightly ajar at room temperature for up to three days to help maintain crispness. Do not refrigerate.
