- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup plain yogurt or sour cream
- 1 cup grated zucchini, lightly squeezed to remove excess moisture
- ½ cup fresh lemon juice (from about 2-3 lemons)
- 1 tablespoon lemon zest
- 1 ½ cups powdered sugar
- 2-3 tablespoons milk or lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, whisk together yogurt or sour cream and lemon juice.
- Alternately add the dry ingredients and the yogurt mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the grated zucchini and lemon zest.
- Pour batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.
- While the bars cool, prepare the glaze: In a small bowl, whisk together powdered sugar and milk or lemon juice until smooth and pourable.
- Once the bars are completely cool, drizzle the glaze over the top.
- Let the glaze set before cutting the bars into squares.
Notes
- Make sure to squeeze excess moisture from the grated zucchini. This prevents the bars from becoming too wet.
- Using plain yogurt or sour cream adds moisture and tenderness to the bars.
- Adjust the amount of milk or lemon juice in the glaze to reach your desired consistency.
- Store bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
