Description

This Loaded Baked Potato Soup recipe is a creamy, comforting bowl that tastes just like your favorite loaded baked potato, but in soup form. It’s easy to make and perfect for a cozy meal.


Ingredients

  • 4 slices bacon, cooked and crumbled
  • 1/2 cup butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cubed potatoes (about 2 medium)
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: more cheddar cheese, sour cream, chives, extra bacon


Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add butter to the pot and melt. Add the chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add the cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Carefully transfer about half of the soup to a blender (or use an immersion blender) and blend until smooth. Return the blended soup to the pot.
  5. Stir in the milk, shredded cheddar cheese, and sour cream. Heat gently over low heat until the cheese is melted and the soup is heated through. Do not boil.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and top with crumbled bacon, additional cheese, sour cream, chives, or any other desired toppings.

Notes

  • For a thicker soup, use fewer potatoes or add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) before adding the milk.
  • You can use leftover baked potatoes for this soup. Just cube them and add them in step 3, reducing the cooking time.
  • This soup is also delicious with ham or shredded chicken added.
