- 1 large head of cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese, divided
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup sour cream
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 cup cooked crumbled bacon (optional)
- 2 tablespoons chopped fresh chives for garnish
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
- Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast for 15 minutes until slightly tender.
- While the cauliflower roasts, prepare the cheese sauce. In a medium saucepan over low heat, whisk together the heavy cream and cream cheese until smooth.
- Stir in the sour cream, minced garlic, and onion powder. Cook gently until the mixture is warm and fully combined. Do not boil.
- Remove the sauce from the heat. Stir in half of the cheddar cheese and all of the Monterey Jack cheese until melted and smooth.
- Place the roasted cauliflower into the prepared baking dish. Pour the cheese sauce evenly over the cauliflower.
- Sprinkle the remaining 1/2 cup of cheddar cheese and the crumbled bacon, if using, on top.
- Bake for 20 to 25 minutes, or until the top is bubbly and golden brown.
- Let the bake rest for 5 minutes before serving. Garnish with fresh chives.

- For an extra gooey texture, use a mix of your favorite melting cheeses.
- If you skip roasting the cauliflower, you may need to add 10-15 minutes to the final bake time to ensure it is tender.
