These Loaded Sweet Potato Nachos are a fun, crowd-pleasing party snack. They bring all the flavor of traditional nachos but use baked sweet potato rounds instead of chips. It’s comfort food made easy for your next gathering.

- 4 medium sweet potatoes, sliced into 1/4-inch rounds
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound ground turkey or black beans (for vegetarian option)
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup cooked corn kernels
- 1/2 cup black beans, rinsed and drained
- 1/4 cup chopped red onion
- 1 jalapeño, thinly sliced (optional)
- Toppings: Sour cream, salsa, chopped cilantro
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Line two large baking sheets with parchment paper.
- Toss the sweet potato rounds with olive oil, salt, and pepper. Arrange them in a single layer on the prepared baking sheets.
- Bake for 15 to 20 minutes, flipping halfway through, until the edges are slightly crispy.
- While potatoes bake, prepare your topping. In a skillet, cook the ground turkey until browned, then drain fat. If using black beans, skip this step.
- Stir the taco seasoning and water into the meat (or beans) and simmer for 5 minutes until the sauce thickens slightly.
- Remove the sweet potatoes from the oven. Top each round with a spoonful of the meat or bean mixture, a sprinkle of cheese, corn, black beans, red onion, and jalapeño slices.
- Return the baking sheets to the oven for 3 to 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven. Top immediately with sour cream, salsa, and fresh cilantro before serving.
Notes
- For the crispiest base, make sure your sweet potato slices are uniform in thickness.
- You can prepare the taco meat mixture ahead of time to save time on party day.
- If you want a fully vegetarian version, use two cans of black beans instead of the turkey.
- Baking the sweet potatoes first prevents them from becoming soggy under the toppings.
