These loaded sweet potato skins are a delightful twist on a classic party appetizer. They’re packed with flavor and perfect for fall gatherings.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them several times with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender. Let them cool slightly.
  4. Cut each sweet potato in half lengthwise. Scoop out most of the flesh, leaving about a 1/4-inch border.
  5. In a bowl, mix the scooped-out sweet potato flesh with olive oil, salt, pepper, cream cheese, sour cream, and chives until well combined.
  6. Spoon the mixture back into the sweet potato skins.
  7. Top with shredded cheddar cheese and crumbled bacon.
  8. Place the loaded sweet potato skins back on the baking sheet.
  9. Bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  10. Serve warm.
