- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces cream cheese, softened
- 1/4 cup sour cream
- 2 tablespoons chopped chives
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them several times with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender. Let them cool slightly.
- Cut each sweet potato in half lengthwise. Scoop out most of the flesh, leaving about a 1/4-inch border.
- In a bowl, mix the scooped-out sweet potato flesh with olive oil, salt, pepper, cream cheese, sour cream, and chives until well combined.
- Spoon the mixture back into the sweet potato skins.
- Top with shredded cheddar cheese and crumbled bacon.
- Place the loaded sweet potato skins back on the baking sheet.
- Bake for another 10-15 minutes, or until the cheese is melted and bubbly.
- Serve warm.

- You can add other toppings like green onions, jalapeños, or pulled pork.
- Make sure the cream cheese is softened for easier mixing.
