Description

These low carb deviled eggs are a perfect snack or appetizer for those on a low-carb or Atkins diet. They are easy to make and full of flavor.


Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise (full fat)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika for garnish
  • Fresh chives, chopped, for garnish (optional)


Instructions

  1. Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
  2. Bring water to a rolling boil over high heat.
  3. Once boiling, remove the pan from heat, cover, and let stand for 10-12 minutes.
  4. Drain the hot water and immediately transfer eggs to an ice bath for 5 minutes to cool completely.
  5. Carefully peel the cooled eggs.
  6. Slice each egg in half lengthwise and gently scoop out the yolks into a small bowl.
  7. Mash the yolks with a fork until smooth.
  8. Add mayonnaise, Dijon mustard, salt, and pepper to the mashed yolks. Mix until well combined and creamy.
  9. Spoon or pipe the yolk mixture back into the egg white halves.
  10. Garnish with a sprinkle of paprika and fresh chives, if desired.
  11. Chill in the refrigerator for at least 30 minutes before serving.

  • For extra flavor, you can add a dash of hot sauce or a pinch of garlic powder to the yolk mixture.
  • Ensure eggs are fully cooled before peeling to prevent the whites from tearing.
