Description
These low carb deviled eggs are a perfect snack or appetizer for those on a low-carb or Atkins diet. They are easy to make and full of flavor.

- 6 large eggs
- 1/4 cup mayonnaise (full fat)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Paprika for garnish
- Fresh chives, chopped, for garnish (optional)
Instructions
- Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
- Bring water to a rolling boil over high heat.
- Once boiling, remove the pan from heat, cover, and let stand for 10-12 minutes.
- Drain the hot water and immediately transfer eggs to an ice bath for 5 minutes to cool completely.
- Carefully peel the cooled eggs.
- Slice each egg in half lengthwise and gently scoop out the yolks into a small bowl.
- Mash the yolks with a fork until smooth.
- Add mayonnaise, Dijon mustard, salt, and pepper to the mashed yolks. Mix until well combined and creamy.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with a sprinkle of paprika and fresh chives, if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For extra flavor, you can add a dash of hot sauce or a pinch of garlic powder to the yolk mixture.
- Ensure eggs are fully cooled before peeling to prevent the whites from tearing.
- These deviled eggs can be made ahead of time and stored in an airtight container in the refrigerator for up to 2-3 days.
