Description

Enjoy a comforting Shepherd’s Pie with a light, low-carb twist using cauliflower mash instead of traditional potatoes. This recipe brings you the cozy flavor you love, made simple for your busy life. Clara Kohn from 911Recipes shares this family-approved meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cup frozen peas
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 pounds cauliflower florets
  • 2 tablespoons butter
  • 1/4 cup milk (or unsweetened almond milk for lower carb)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned. Drain excess fat.
  3. Add chopped onion and carrots to the skillet. Cook until softened, about 5 minutes.
  4. Stir in frozen peas, beef broth, and thyme. Season with salt and pepper. Simmer for 5 minutes until the sauce thickens slightly. Pour the meat mixture into a baking dish.
  5. While the filling simmers, steam or boil the cauliflower florets until very tender.
  6. Drain the cauliflower well. Return it to the pot. Add butter, milk, salt, and pepper. Mash until smooth, adding Parmesan cheese if you choose.
  7. Spoon the cauliflower mash evenly over the meat filling in the baking dish.
  8. Bake for 20-25 minutes, or until the topping is lightly golden and the filling is bubbly.
  9. Let it rest for 5 minutes before serving.

Notes

  • Savana Loyal suggests making sure the cauliflower is very dry after cooking for the best mash texture.
  • Alara Kohn recommends adding a splash of Worcestershire sauce to the meat mixture for extra depth of flavor.
  • This dish reheats well, making it great for easy weeknight meals.
