Ingredients

  • 1 pound yellow squash, thinly sliced
  • 1 pound zucchini, thinly sliced
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup almond flour (optional, for topping)
  • 2 tablespoons melted butter (optional, for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat.
  3. Add the chopped onion and bell pepper and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Add the sliced squash and zucchini to the skillet. Cook, stirring occasionally, until the vegetables are tender-crisp, about 8-10 minutes.
  6. Stir in the heavy cream, Parmesan cheese, cheddar cheese, salt, and pepper. Cook until the cheese is melted and the sauce has thickened slightly.
  7. Pour the mixture into a greased 8×8 inch baking dish.
  8. Optional: In a small bowl, combine almond flour and 2 tablespoons of melted butter. Sprinkle this topping evenly over the casserole.
  9. Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.
  10. Let stand for a few minutes before serving.

Notes

  • You can use any combination of summer squash and zucchini you like.
