Instructions
- Preheat your oven to 400°F (200°C).
- Toss the broccoli florets and halved baby potatoes with olive oil, salt, and pepper on a large baking sheet.
- Roast the vegetables for 15 minutes.
- While the vegetables are roasting, whisk together the maple syrup, soy sauce, Dijon mustard, and minced garlic in a small bowl to make the glaze.
- Pat the salmon fillet dry and place it on the baking sheet with the vegetables.
- Brush the maple glaze generously over the salmon.
- Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
- Serve immediately.
