Ingredients

  • 1 lb broccoli florets
  • 1 lb baby potatoes, halved

  • For the Glaze:
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets and halved baby potatoes with olive oil, salt, and pepper on a large baking sheet.
  3. Roast the vegetables for 15 minutes.
  4. While the vegetables are roasting, whisk together the maple syrup, soy sauce, Dijon mustard, and minced garlic in a small bowl to make the glaze.
  5. Pat the salmon fillet dry and place it on the baking sheet with the vegetables.
