- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon maple extract
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped pecans
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Beat in the maple extract and vanilla extract.
- In a separate bowl, whisk together the flour, chopped pecans, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently form into a disc.
- Roll the dough to about 1/4 inch thickness. Cut out shapes using cookie cutters or cut into squares.
- Place cookies on the prepared baking sheets.
- Bake for 15-20 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- Ensure your butter is properly softened but not melted.
- Do not overwork the dough for tender shortbread.
- Store cookies in an airtight container at room temperature.
