Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon maple extract
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped pecans
  • Pinch of salt


Instructions

  1. Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the maple extract and vanilla extract.
  4. In a separate bowl, whisk together the flour, chopped pecans, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently form into a disc.
  7. Roll the dough to about 1/4 inch thickness. Cut out shapes using cookie cutters or cut into squares.
  8. Place cookies on the prepared baking sheets.
  9. Bake for 15-20 minutes, or until the edges are lightly golden.
  10. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
