Description

This recipe provides simple instructions for roasting parsnips with maple syrup and thyme until they are tender and slightly caramelized.


Ingredients

  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Peel the parsnips and trim off the ends. Cut the parsnips into uniform pieces, about 1 inch thick.
  3. In a large bowl, combine the cut parsnips, maple syrup, olive oil, thyme, salt, and pepper. Toss until the parsnips are evenly coated.
  4. Spread the coated parsnips in a single layer on a large baking sheet. Do not overcrowd the pan; use two sheets if necessary for better caramelization.
  5. Roast for 25 to 35 minutes, turning the parsnips halfway through the cooking time. The parsnips are done when they are tender when pierced with a fork and the edges show light browning.
  6. Serve immediately as a side dish.

Notes

  • For extra crispiness, you can briefly place the baking sheet under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
  • If you do not have fresh thyme, use 1/2 teaspoon of dried thyme.
  • You can substitute honey for maple syrup if needed.
