Description

This simple citrus garlic marinade infuses your pork chops with bright, fresh flavor, making them perfect for grilling or baking. It is an easy pork marinade you will use often.

Ingredients

Scale
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 bone-in or boneless pork chops (about 1 inch thick)

Instructions

  1. In a medium bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, Dijon mustard, oregano, pepper, and salt. This creates your citrus garlic pork chop marinade.
  2. Place the pork chops in a large, resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are fully coated.
  3. Seal the bag or cover the dish. Refrigerate for at least 30 minutes, or up to 4 hours for the best flavor. For an overnight pork marinade, use caution with the citrus juice; 4 hours is often best for this recipe.
  4. Preheat your grill to medium heat (about 350°F) or preheat your oven to 400°F (200°F).
  5. Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
  6. If grilling, place chops on the oiled grates and cook for 5 to 7 minutes per side, until the internal temperature reaches 145°F.
  7. If baking, place chops on a lightly oiled baking sheet and bake for 18 to 22 minutes, until the internal temperature reaches 145°F.
  8. Let the pork chops rest for 5 minutes before serving.

Notes

  • For a slightly sweeter profile, you can substitute 1 tablespoon of the orange juice with 1 tablespoon of honey to make a honey mustard pork chops variation.
  • If you are looking for a low-sodium option, reduce the added salt to 1/4 teaspoon.
  • You can use this as a base for an asian pork chop marinade by adding 1 tablespoon of soy sauce and 1 teaspoon of grated fresh ginger to the mixture.
